New CT Law in Effect for Restaurant Owners of All Class III or Class IV Food Establishments

The State Of Connecticut Department of Environmental Protection has new law that requires Class III or Class IV establishments must be in compliance by July 1, 2011, however four conditions exist that may force earlier compliance. see also General Permit for the Discharge of Wastewater Associated with Food Preparation Establishments which can be viewed by General Permit for discharge of Wastewater associated with Food Preparation or by Visiting CT.Gov website.

The four conditions that exist that may force earlier compliance are

1. Renovations,
2. Change in ownership
3. Areas of existing sewer problems
4. Within local municipalities which have implementmented the program already.

The new law will require all CT Restaurants & Food Establishments

1. Installation of Minimum 1000 gallon outdoor passive grease interceptor.
2. Installation an Automatic Grease Recovery Unit.
3. This law also requires that records of all inspections, cleaning and maintenance be recorded and kept on site for a period of 5 years.
A Grease recovery device, aka Automatic Grease Trap Interceptor, shall be installed on those fixtures or drains which would allow F.O.G. - Fats, Oils, & Grease to be discharged, this shall include any of the following

Pot Sinks, Compartment Sinks
Pre-Rinse Sinks, Prep Sinks
Any sink into which fats, oils, or grease are likely to be introduced;
Soup Kettles, Tilting Skillets, or similar devices;
Wok Stations;
Floor Drains or Sinks into which Kettles or Skillets may be drained;
Automatic Hood Wash Units:
Any other equipment / fixtures or drains that are likely to allow fats, oils and grease to be discharged.
